发酵工艺:水果酵素采用传统工艺发酵,发酵过程基本分三个阶段: 酵母菌发酵、醋酸菌发酵和乳酸菌发酵。

Fermentation process: use traditional process for fermentation of fruit enzyme, the fermentation process has three stages: yeast fermentation, vinegar organismfermentation and lactobacillus fermentation.

*阶段:酵母菌发酵:酵母菌发酵阶段将大分子分解成小分子,把淀粉分解成二氧化碳和酒精,也叫糖化作用。

First stage: yeast fermentation: yeast fermentation stage will decompose large molecules into small ones, decompose starch into carbon dioxide and alcohol, also known as glycation.

第二阶段:醋酸菌发酵:醋酸菌发酵阶段将酒精分解掉,这个阶段也叫醋化作用。

果蔬汁中含有大量的水,糖份,苹果酸、柠檬酸,酒石酸等,果汁中还含有少量的单宁和蛋白质,矿物质主要包括钙、磷、钾、钠等。色素包括类胡萝卜素、花色素等。还含有少量的热敏性物质和芳香物质。只有充分掌握果蔬汁的成分及其特性,才能够在果汁加工生产过程中灵活应用各种技术,对破坏果汁原有的营养、色泽、风味,芳香的环节进行干预,以Z大限度的获得原汁原味的Z终优质产品。
草莓汁、草莓酱加工设备生产线 产品信息

果汁一般分为澄清果汁和混浊果蔬汁,常见的澄清果蔬汁有草莓汁、打瓜汁、蓝莓汁、黑莓汁等等;混浊果蔬汁有橙汁、番茄汁、胡萝卜汁等;带果肉的果汁一般有桃、杏、李、梅等。果汁加工的工艺流程:预处理(挑选、清洗、破碎、热处理)—取汁—粗滤—成分调整—精滤—均质脱气—浓缩—杀菌—灌装。
生产量:500kg-200000kg/h
在预处理过程中要注意的是,对农药残留较多的果蔬,清洗时可加用*或脂肪酸进行处理;对于微生物污染。在大多数水果破碎之后,榨汁之前都必须进行预热处理,目的是使果肉组织软化提高出汁率;另外不同的预热温度可以促进或者抑制酶的活性,根据酶的性质不同掌握适当的PH值、温度和作用时间,直接影响zui终产品的色泽和风味,所以根据不同的市场需求,必须把握好不同的处理工艺。在果汁澄清中有几种方法可以达到澄清目的,酶法,明胶—单宁法,酶—明胶法,硅藻土法等。值得注意的是,在使用酶法的时候,一般果胶酶的适用PH值为4.5~5.0,温度为50℃,如果是葡萄汁加工,还要进行专门的除酒石。
果汁的调整混合,即调配过程。包括糖度的调整,固酸比的确定,*的添加等。使zui终产品达到一定的规格,是对zui终产品的营养、口味、色泽起决定性的一步。在生产混浊果汁的时候还必须对果汁进行均质,防止固液分离、分层,促进口感更细腻。为防止果汁氧化变质,还需对果汁进行脱气,除去前处理过程中混入的大量氧气、二氧化碳和氮气。果汁浓缩一般都采用降膜式浓缩,而且需要在真空状态下,低温、快速、高效的浓缩,在确保这些条件达到的情况下,使浓缩锅实现zui大节能化,以降低生产成本。在浓缩的过程中,通常需要对果汁进行芳香回收,苹果汁芳香回收率一般在8%~10%,葡萄汁和橙汁在26%~30%。
果汁的杀菌灌装,大多数澄清果汁都是进行热灌装,灌装后再对产品进行隧道式杀菌,一般在85℃~95℃进行15分钟到30分钟的杀菌。对于混浊果汁一般采用高温短时杀菌,因为混浊果汁加热时间过长容易产生煮过味,而且色泽和香味损失也比较大。杀菌后迅速降温再进行后续包装。
